  • 2 eggs

  • 2/3 cup chocolate protein powder (or cocoa powder)

  • 3 tbsp maple syrup

  • 1/4 tsp baking soda

  • Pinch of salt

  • Chocolate chips (I use no sugar added, measure with your heart!)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch pyrex dish with parchment paper and set aside.

  2. In a large mixing bowl, mash the ripe bananas until smooth.

  3. Add the runny nut butter to the mashed bananas and mix until well combined.

  4. Crack in the eggs and beat them into the banana-nut butter mixture until smooth.

  5. Incorporate the chocolate protein powder (or cocoa powder) into the mixture, stirring until evenly distributed.

  6. Pour in the maple syrup and mix well.

  7. Add the baking soda and a pinch of salt to the batter, stirring until everything is fully combined.

  8. If desired, fold in chocolate chips into the batter according to your preference.

  9. Pour the batter into the prepared pyrex dish, spreading it out evenly.

  10. Bake in the preheated oven for 12 minutes.

  11. Once done, remove the brownies from the oven and allow them to cool in the dish for a few minutes before slicing into squares and serving.

STORAGE TIPS

  • Room Temperature: If you plan to consume the brownies within a day or two, you can store them at room temperature in an airtight container. Ensure they are completely cooled before transferring to the container to prevent moisture buildup.

  • Refrigeration: For longer storage, particularly in warmer climates, refrigeration can help prolong the shelf life of the brownies. Place them in an airtight container or wrap them tightly in plastic wrap before refrigerating. They can last for up to 5-7 days in the fridge.
